Beautiful Breakfast

It is the same old story isn't it? Work Monday through Friday. By Friday night we are all ready to go out and have some fun. Fun turns into a lot of fun, but then the next morning isn't so hot. Yet we all want to be a good wife and lover. What is better than presenting your Man with a beautiful breakfast? Not much. Maybe giving it to him while wearing his favorite nighty and heels. I found brushing my hair and teeth and putting on some deodorant and perfume helped as well. Do this and He will be impressed that not only were you able to party with the best of them the night before, but you were able to make him this gourmet breakfast on top of it. Let him wonder how you did it. This recipe is easy and comes across like you slaved in the kitchen for hours. It may look intimidating, but trust me it is easy. 


Tip: Serve it with a Mimosa  to start the fun all over again! He will think you are a dream come true.

All you need for the Cups:
4 eggs
4 strips of bacon
4 slices of bread
Salt and Pepper

For the Easy Quick Hollandaise:
3 egg yolks
1/2 cup butter
2 tablespoons lemon juice
a dash of salt
1/2 teaspoon dried mustard
 a pinch of cayenne pepper 

Preheat the oven to 400° F. Spray large muffin pan with cooking spray. Find a biscuit cutter or cookie cutter that is close in size to your muffin tin.


In a frying pan, cook bacon about 3-5 minutes, until partially cooked but not completely crispy. Transfer to a paper towel-lined plate. Cut out circles in each piece of bread using the cutter. 
You can save the crusts to use for breadcrumbs or stuffing at a later time. Press the bread rounds into the greased muffin wells. 
Curl a piece of bacon around the periphery of each piece of bread, positioning it between the bread and the muffin tin to help keep it in position.
 Crack one egg over each piece of bread being careful not to break the yolks, 
Once all the bread pieces have been topped with eggs, 
bake until eggs are cooked through to your liking (about 15 minutes) and bacon is crispy.
While baking, make the hollandaise.
Separate the eggs and add to blender. Heat the butter in the microwave or on the stove, until steaming, but not boiling.
With the blender turned on high, very slowly stream in the hot butter. Make sure the stream of butter is very small. 
Add lemon juice, salt, and optional hot sauce. Continue to blend until thick and creamy. 
Once egg cups are done.... Run a knife around the edge of each muffin well and pop the egg cups out. 
Season with salt and pepper to taste.

Add hollandaise on the side. 
Serve immediately.
